Thomas Caterers: The Masters Dinner

This is the latest in our Designer’s Notebooks series in which designers turn back the pages of their “notebooks” to revisit their favorite events, or in this case, their award-worthy events. A clear top tent in the backyard of a private residence, set up to entertain 54 guests.

Every fall, an exclusive group of event professionals gather for a special evening of high-powered networking and discussion of the industry’s hottest topics while they enjoyed a fine-dining experience. Entitled “The Masters Dinner” the event deserves nothing less than a masterpiece menu. The courses consisted of a wide range of seasonal autumn ingredients, combined with unique culinary techniques and presentations. Each dish complemented the event’s rustic yet elegant ambiance. The guests had attended this event in previous years, so it was important for us to be innovative, while remaining true to our reputation.

The concept was for the cuisine to blend with the season, décor, atmosphere and above all, the high level of expectations. We wanted to use a combination of fairly new and also familiar food items that had proven to be very well received by many guests. The season, décor, and atmosphere, and high quality were all considered when selecting the food and beverage. For the guests, it was a truly memorable experience. For us, it was an award-winning combination!

Cheddar Yorkshire Pudding with Duck Confit and Hibiscus Jelly.

Crispy Chicken Skin Chips and Mini Kool-Aid Pickles.

Windowpane Chips paired with Root Beer and Spiced Cream Coconut Rum.

Hand Smoked Shrimp and Grits, served in a jar with a corked lid so when guests opened it they were greeted by a delectably smoky aroma.

Bow Tie Pasta with Italian Sausage, Butternut Squash, Brown Sage Butter, and Shaved Parmesan served in mini colanders on top of cork coasters and a white saucer.

Hazelnut and Honey Mustard crusted Pork Tenderloin with a Port Wine Maple demi-glace.

Popcorn Mousse Trifle topped with Pine Nut
Popcorn Meringue Kernels garnished with a sweet
